What you will need:
~2 1/2 cups all-purpose flour
~1 1/2 cups sugar
~1 teaspoon baking soda
~1 teaspoon salt
~1 teaspoon cocoa powder
~1 1/2 cups vegetable oil
~1 cup buttermilk, room temperature
~2 large eggs, room temperature
~2 tablespoons red food coloring
~1 teaspoon white distilled vinegar
~1 teaspoon vanilla extract

What to do:
~Preheat the oven to 350 degrees
~Fill2 (12-cup) muffin pans with cupcake papers.
~In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. 
~In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla..
~Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
~Divide the batter evenly among the cupcake tins about 2/3 filled.
~Bake in oven for about 20 to 22 minutes; test the cupcakes with a toothpick for doneness.
~ Let cool for 10 minutes.

What you will need:
~2 1/4 cups flour
~1 1/2 cups sugar
~1/2 cup butter/margarine
~1 1/4 cups milk
~3 1/2 tsp. baking powder
~1 tsp. salt
~1 tsp. vanilla extract
~3 large eggs
~cupcake wrappers

What to do:
~Heat oven to 350 degrees
~Mix all in gredients on low speed for thirty seconds. (personal tip: sift the flour first! it will help make the cupcakes lighter!). Scrape bowl constantly.
~Beat on high speed for three minutes, stirring occasionally.
~Put the cupcake wrappers into a muffin tin and scoop the batter into it; about 2/3 of the way full.
~Bake for 25-30 minutes or until toothpick inserted into the center of the cake comes out clean.
~Let them cool for 5-10 minutes before icing.

You will need:
~2 apples (preferably Honeycrisps) cored, peeled, and chopped
~1/2 cup orange juice
~1 tablespoon lemon juice
~1/4 cup brown sugar
~3-4 scrapes of fresh nutmeg (optional)
~1 teaspoon cinnamon
~salt

What to do:
~In a sauce pot on medium-high heat, add all of the ingredients besides salt (apples, orange juice, lemon juice, brown sugar, nutmeg, and cinnamon). 
~Let simmer until apples have become tender and the juices have turned to a thin syrup. 
~Take off heat, sprinkle on a small amount of salt, and insert into your favorite vanilla cupcake.
